Worth leaving your luxurious accommodations on the coast to dine at this popular north Sardinia eatery owned by Rita Denza (in the Hotel Gallura). Everything is made from local ingredients from local waters, woods and fields.

Small plates of food keep coming but save room for your entrée. Delicious oysters. Denza has other treats, which you'll learn about since she's ubiquitous (smoked cuttlefish with wild beet root and rabbit in saffron). A must is the crema di riso con frutti di bosco dessert. La Dispensa dei Monsú  

The French chef’s ("monsú" for "monsieur") pantry ("dispensa") makes for fine food in a casual setting. This cheese shop expanded to serve hot seasonal dishes like Piombini pasta balls with pureed fava, lentils with lardo di Colonnata, baked cheese. Or sample local cheeses like ricotta with pistaschios, caprino Robiola (goat cheese), piacentu ennese (saffron-peppercorn), pecorino "ubriaco" (wine-aged) plus Sicilian prosciutto and salami. Food in the farm house.

When in Sardinia, detour to Orroli to eat at this "restaurant museum." Inside a 200-year-old farmhouse — with all its rustic charm intact — the owners do their best to safeguard culinary traditions that are on their way to extinction. The bread is handmade by women dressed in traditional costumes as are the other dishes: gli spizzulus (egg pasta with wild mushrooms), la fregola (rolled pasta with meat sauce), pora (sheep) and porchetta (roasted pork). Oliene's rustic charm.

Hidden in a green oasis at the base of a dramatic wall of mountains, the hotel/restaurant is easy to find, despite not having an address. Past the lobby is a dreamy courtyard where red hibiscus drapes over whitewashed walls and copper pans glimmer in the sun. The place is drenched in rustic charm: smoked cheeses hang from wooden beams and ancient cooking utensils adorn the walls. A log fire burns with four skewered piglets roasting against the hearth.
